Sodium metaphosphate CAS 10124-56-8

CAS No.10124-56-8
Other Name:
Sodium hexametaphosphate;
Metap
MF:Na6P6O18

Sodium hexametaphosphate, molecular formula: (NaPO3) 6, white powder crystalline, or colorless transparent glass flake or block solid. Easily soluble in water, insoluble in organic solvents. It has strong hygroscopicity and can gradually absorb moisture when exposed to the air, forming a sticky substance. It can form soluble complexes with metal ions such as calcium and magnesium. It has a wide range of applications in both the food and industrial fields.

  2. Density (g/mL, 25 ℃): 2.5.
  3. Melting point (decomposition, º C): 616.
  4. Solubility: Easily soluble in water, insoluble in organic solvents. It has strong hygroscopicity and can gradually absorb moisture when exposed to the air, forming a sticky substance. It can form soluble complexes with metal ions such as calcium and magnesium.

Application situation

  1. Mainly used in the food and industrial industries. The main applications in the food industry are:

Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc. It can improve water retention, increase adhesion, and prevent fat oxidation;

Used in soy sauce and soy sauce to prevent discoloration, increase viscosity, shorten fermentation period, and regulate taste;

Used for fruit drinks and refreshing beverages, it can increase juice yield, increase viscosity, and inhibit the decomposition of vitamin C;

Used in ice cream, it can improve swelling capacity, increase volume, enhance emulsifying effect, prevent paste damage, and improve taste and color;

For dairy products and beverages to prevent gel precipitation;

Adding beer can clarify the liquor and prevent turbidity;

Used for canned beans, fruits and vegetables, can stabilize natural pigments and protect food color;

Spraying sodium hexametaphosphate aqueous solution onto cured meat can improve its anti-corrosion performance.

  1. The industrial sector mainly includes:

Sodium hexametaphosphate can be heated with sodium fluoride to produce sodium monofluorophosphate, which is an important industrial raw material;

Sodium hexametaphosphate, as a water softener, plays a role in softening water when used in dyeing and finishing;

Sodium hexametaphosphate is also widely used as a scale inhibitor in water treatment industries such as EDI (resin electrodialysis), RO (reverse osmosis), NF (nanofiltration), etc
